Plantain French Fries - Brunch Style!

I love potatoes, but they’re not the only ones who can French Fry. Try this Caribbean take on classic French fries. Perfectly golden and crispy, with a heartier texture inside. LOVE!

Ingredients:

3 green plantains cut into 1/4” sticks (but the plantain in half, then make your matchsticks)

Oil for frying

Tofu scramble (see recipe here)

Vegan butter to fry tofu

Vine tomatoes, diced

Haas Avocado, diced

Sliced green onions

Cilantro leaves

3 T vegan mayo

1.5T ketchup

1 t crushed garlic

1/2 t granulated garlic

salt to taste for fries and mayo ketchup

Method:

  1. Set your oil to fry the plantains at 375ºF and fry until golden.

  2. Set a skillet to medium high and pan fry the tofu scramble until golden brown and crumbly in texture.

  3. Put mayo, ketchup, crushed garlic, granulated garlic, and salt in a small bowl and mix thoroughly.

  4. Assemble your fries plantains first, tofu scramble on top, with mayo ketchup on top of the scramble.

  5. Add int he diced tomatoes and avocado, then garnish with green onions and cilantro.
